6 large tart apples (Granny Smith, McIntosh)
2 cups cranberries (fresh or frozen)
4-6 Tbsps brown sugar
2 Tbsps lemon juice
2 tsps cinnamon
2 1/2 cups flour
2 tsps baking powder
1 1/2 cups granulated sugar
1 1/2 cups vegetable oil
Cut apples in two, core, slice and place in big bowl. Sprinkle with lemon juice, then mix with brown sugar and cinnamon. Fold in cranberries and layer on bottom of baking pan. In bowl, mix all other ingredients well and drop by spoonfuls to completely cover the fruit. Bake in preheated oven at 350F, or until surface turns golden brown.(I always underbake mine) Serve hot out of the oven, with ice cream or just plain.
